Dutch Oven Pizza

 | cooking spray |
 | 12 sliced English muffins (will make 24 little pizzas) |
 | 1 jar Ragu (or similar brand) pasta sauce (Super Chunky Mushroom or your
favorite) |
 | 2 to 4 cups shredded cheese (Monterey Jack and Colby or your favorite) |
 | 1 bag Canadian bacon and/or pepperoni, pizza style |
 | 1 jar sliced mushrooms |
Spray the bottom of Dutch oven with non-stick cooking spray. Heat Dutch
oven bottom (you will not need the lid). *Cover one-half of the bottom of
the Dutch oven with English muffin halves (top down -- the side without the
crust). When warm, turn the English muffins over (bottom down).
Put 1 tablespoon pasta sauce on top of each English muffin. Add 1
tablespoon of cheese. Put on Canadian bacon and/or pepperoni. Put on
mushrooms if wanted.
Cook until cheese is melted (* if the tops were heated first, they will cook in
a few minutes). Do not use the Dutch oven lid. Put 15 to 18 white
hot charcoal briquettes under the bottom of the Dutch oven and cook at low heat
(about 325 degrees).
